Amazingly Delicious BBQ Sauce
The name says it all! The best thing about this BBQ Sauce, it's flexible. If you want more of a sweet sauce, add more sugar or honey. For more of a savory sauce, add less sugar.

Ingredients
  1. 1 cup of Ketchup
  2. 1/2 cup of Brown Sugar
  3. Liquid Smoke to taste - (not needed if meat is smoked in Viking Smoker).
  4. 1 Yellow Onion, diced
  5. 1 Jalapeno diced
Instructions
  1. Saute the onions in butter, add the jalapenos, then ketchup, sugar and liquid smoke. Simmer for 1 hour.

Savory Raspberry Sauce

Ingredients
  1. 1 TBS of Lemon Juice
  2. 1 Cup of Raspberry Vinegar or Red Wine Vinegar
  3. 1 Bay Leaf
  4. 1 TBS of Whole Peppercorns
  5. 2 TBS of Molasses
  6. 2 Cloves Garlic
  7. 8 oz. Frozen Raspberries
  8. 1/3 pound of Butter cut into small cubes
  9. 4 oz. Fresh Raspberries
Instructions
  1. Step 1 -
  2. Combine the first 6 ingredients and create a syrup consistency. Pour through a fine mesh sive into the frozen raspberries and bring to a boil.
  3. Step 2 -
  4. Turn heat to simmer and slowly add butter to sauce. Pour into serving dish and add fresh raspberries.

Stilton Sauce
This sauce goes well with everything, especially beef!

Ingredients
  1. 4 oz. Bleu or Stilton Cheese
  2. 2 TBS of Brandy
  3. 1 Pint of Fresh Heavy Cream
  4. 1/2 cup of Brown Sugar or one package of Knorr Brown Gravy
  5. Ground pepper to taste
Instructions
  1. Step 1 -
  2. Prepare cream by reducing it by half (keep warm). Prepare brown sauce according to package instructions (keep warm).
  3. Step 2 -
  4. Heat pan, (using the pan the meat was cooked in). Melt cheese in the pan using a wire whisk. Take pan off of heat and add brandy. Bring it back to the heat. Add cream, brown sauce and simmer to desired consistency. Finish with ground pepper to taste.

  1. 1 Cup of Ice Cold Water
  2. 1 Cup of Cold Milk
  3. 4 Whole Eggs
  4. 1/2 tsp of Salt
  5. 2 Cups of All Purpose Flour
  6. 4 TBS of Butter
Instructions
  1. Put first 4 ingredients into a blender and blend well. Add flour and mix for one minute. Scrape sides and mix for an additional minute. Slowly add melted butter - warm, not hot, to the mixture while blender is running. Let set for 2 hours in the refrigerator.

Ingredients
  1. 1 Package of Jiffy Corn Bread Mix
  2. 1 Cup of Fresh Corn from the cob (about 2 ears)
  3. 12 ounces of Frozen or Canned Corn
  4. 1 8.5 ounce can of Creamed Corn
  5. 8 ounces of Vanilla Yogurt
  6. 1 cup of Milk
  7. 4 Eggs
  8. 1/4 cup of Melted Butter
  9. 9x9x2 Baking Dish
Instructions
  1. Preheat oven to 350 degrees. Combine all dry ingredients and mix thoroughly. Beat eggs until no white is visible. Add beaten eggs, yogurt, whole kernel corn, creamed corn, and milk to dry ingredients. Whisk until incorporated. Pour into greased baking dish and bake for 35 minutes or until it sets. This dish is meant to be moist so be careful no to over bake.

Banana Pineapple Foster

Ingredients
  1. 3 Bananas Sliced
  2. 1/2 Cup Fresh Pineapple Pealed, Cored and cut into 1" cubes
  3. 1/4 pound fresh unsalted butter
  4. 1 Cup Brown Sugar
  5. 2-3 oz. Spiced Rum
Instructions
  1. Melt butter, add brown sugar, heat until sugar and butter are melted. Add fruit and stir gently. Heat fruit while pan is still very hot. Remove pan from heat and pour the rum in the front of the pan. Place the pan back on the heat tipping the front of the pan to the flame as to put it back on the flame. Serve over ice cream. Add ground cinnamon if desired.
